Chardonnay White WINE-MAKING This white wine was made with Chardonnay grapes coming from our Ázqueta estate, located at an altitude of 570 metres. The grapes were harvested in the cool of the night, between 8 to 10 ºC, to facilitate slower fermentation, at a low temperature and with no loss of aromas. The grape juice, once racked, was transferred to new, 300 litre Allier oak stave barrels for fermentation, which lasted an average of 35 days. The wine was kept in contact with its lees until the end of February, and it was then decanted into a vat.
TASTING NOTES A dominant soft straw gold colour, yet with green tones, clear and transparent. Very pleasant, an initial toasted or sugar- roasted aroma of the barrel predominates, whilst still maintaining the freshness of the varietal. As the wine opens, more fruit appears (banana) and the wood softens. Slightly acidic on the gums and back palate. A very pleasant aftertaste, not excessively intense or lingering.
